Ingredients

  • 1 courgette (zucchini), grated
  • 1 red pepper, diced
  • 200g brie cheese, cut into small pieces
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1 cup milk
  • 2 eggs, beaten

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.

  2. In a large bowl, combine the grated courgette, diced red pepper, and brie cheese. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.

  4. Add the olive oil, milk, and beaten eggs to the flour mixture. Stir until just combined.

  5. Fold in the courgette, red pepper, and brie mixture until evenly distributed throughout the batter.

  6. Spoon the batter into the prepared muffin tin, filling each muffin cup about 3/4 full.

  7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
