  • 8 lamb chops
  • 2 courgettes, sliced
  • 200g feta cheese, crumbled
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the grill or griddle pan.

  2. Season the lamb chops with salt and pepper, then grill for 3-4 minutes on each side, or until cooked to your liking.

  3. While the lamb cooks, drizzle the courgette slices with olive oil and season with salt and pepper. Grill for 2-3 minutes on each side until tender and slightly charred.

  4. In a bowl, combine the grilled courgette slices, crumbled feta cheese, lemon juice, and olive oil. Toss to combine.

  5. Serve the lamb chops hot with the griddled courgette and feta salad on the side.
