How To Make Asparagus & Courgette Salad with Feta & Sesame Seeds

Ingredients
- 1 bunch of asparagus, trimmed
- 2 courgettes, sliced
- 200g feta cheese, crumbled
- 2 tbsp toasted sesame seeds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions

Bring a pot of salted water to a boil. Add the asparagus and cook for 2 minutes, then remove and plunge into ice water to stop the cooking process. Drain and set aside.

Heat a grill pan over high heat. Toss the courgette slices with olive oil, salt, and pepper. Grill for 2-3 minutes on each side until tender and slightly charred. Remove from heat.

In a large bowl, combine the cooked asparagus, grilled courgettes, feta cheese, and toasted sesame seeds.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss gently to combine.

Serve the salad chilled or at room temperature.
