How To Make Spicy Potato Soup

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 4 cups of vegetable broth
  • 1 cup of milk
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1/2 tsp of cayenne pepper
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and jalapeno pepper. Cook until the onion is translucent, stirring occasionally.

  2. Add the diced potatoes, vegetable broth, cumin, paprika, and cayenne pepper to the pot. Bring to a boil, then reduce heat to low and simmer for about 20 minutes or until the potatoes are tender.

  3. Using an immersion blender or a regular blender, blend the soup until smooth and creamy. If using a regular blender, blend in batches.

  4. Return the soup to the pot and stir in the milk. Season with salt and pepper to taste. Cook for an additional 5 minutes to heat through.

  5. Serve the soup hot, garnished with chopped fresh cilantro.
