How To Make Grilled Peach, Chicken & Feta Salad

A refreshing summer salad with grilled peaches, grilled chicken, and feta cheese, all tossed together in a tangy vinaigrette.

Serves:

Ingredients

  • 2 peaches, halved and pitted
  • 2 chicken breasts
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium heat.

  2. Brush peaches and chicken breasts with olive oil and season with salt and pepper.

  3. Grill peaches for 2-3 minutes per side, until lightly charred. Remove from grill and set aside.

  4. Grill chicken breasts for 6-8 minutes per side, until cooked through. Remove from grill and let rest for 5 minutes, then slice into thin strips.

  5. In a large bowl, combine salad greens, feta cheese, red onion, basil, and mint.

  6. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.

  7. Add grilled peaches and chicken to the salad greens, then drizzle with the vinaigrette.

  8. Toss everything together until well combined.

  9. Serve immediately and enjoy!
