How To Make Grilled Peach, Chicken & Feta Salad
A refreshing summer salad with grilled peaches, grilled chicken, and feta cheese, all tossed together in a tangy vinaigrette.
Serves:
Ingredients
- 2 peaches, halved and pitted
- 2 chicken breasts
- 4 cups mixed salad greens
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced red onion
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions

Preheat grill to medium heat.

Brush peaches and chicken breasts with olive oil and season with salt and pepper.

Grill peaches for 2-3 minutes per side, until lightly charred. Remove from grill and set aside.

Grill chicken breasts for 6-8 minutes per side, until cooked through. Remove from grill and let rest for 5 minutes, then slice into thin strips.

In a large bowl, combine salad greens, feta cheese, red onion, basil, and mint.

In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.

Add grilled peaches and chicken to the salad greens, then drizzle with the vinaigrette.
