How To Make Sweet potato, avocado & feta muffins

Ingredients
- 2 cups mashed sweet potato
- 1 ripe avocado
- 1/2 cup crumbled feta cheese
- 2 eggs
- 1/4 cup milk
- 1/4 cup olive oil
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- Optional toppings: additional crumbled feta cheese, chopped fresh herbs
Instructions

Preheat your oven to 375°F (190°C). Grease or line a muffin tin.

In a large bowl, mash the sweet potato and avocado together until well combined.

Add in the eggs, milk, and olive oil, and mix until smooth.

In a separate bowl, whisk together the flour, baking powder, salt, black pepper, and paprika.

Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.

Fold in the crumbled feta cheese.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

If desired, sprinkle additional crumbled feta cheese and chopped fresh herbs on top.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
