  • 4 medium courgettes
  • 2 tbsp olive oil

  • Salt and pepper to taste
  • 1/4 cup chopped fresh herbs (such as basil, mint or parsley)
  • 1/4 cup crumbled feta cheese
  • Optional toppings: cherry tomatoes, sliced radishes, toasted pine nuts

Instructions

  1. Slice the courgettes into thin ribbons using a vegetable peeler or mandoline.

  2. In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

  3. Add the courgette ribbons to the bowl and toss to coat them evenly with the dressing.

  4. Let the salad marinate in the fridge for at least 10 minutes to allow the flavors to meld.

  5. Before serving, sprinkle the chopped herbs and crumbled feta cheese over the salad.

  6. Optional: Add cherry tomatoes, sliced radishes, and toasted pine nuts for extra flavor and crunch.

  7. Serve the summer courgette ribbon salad chilled.
