How To Make Summer courgette ribbon salad

- 4 medium courgettes
- 2 tbsp olive oil

- 1/4 cup crumbled feta cheese
- Optional toppings: cherry tomatoes, sliced radishes, toasted pine nuts
Instructions

Slice the courgettes into thin ribbons using a vegetable peeler or mandoline.

In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.

Add the courgette ribbons to the bowl and toss to coat them evenly with the dressing.

Let the salad marinate in the fridge for at least 10 minutes to allow the flavors to meld.
