Delicious low carb breakfast muffins with crispy bacon and fluffy eggs.

Ingredients

  • 8 slices of bacon
  • 8 eggs
  • 1/4 cup of shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease muffin cups with cooking spray.

  2. Cook bacon slices until crispy, then chop into small pieces.

  3. Crack eggs into a mixing bowl, add shredded cheese, bacon pieces, salt, and pepper, and mix well.

  4. Pour mixture into muffin cups, filling each about 3/4 full.

  5. Bake for 20 minutes, until muffins are set and slightly golden.

  6. Let cool for a few minutes, then use a spoon to loosen edges and remove muffins from cups.

  7. Serve and enjoy!
