How To Make Low Carb Veggie Omelette Recipe

A healthy, vegetarian omelette filled with assorted vegetables and low-fat cheese.

Ingredients

  • 8 large eggs
  • 1/4 cup of unsweetened almond milk
  • 1/2 cup of chopped onions
  • 1/2 cup of chopped bell peppers
  • 1/2 cup of chopped mushrooms
  • 1/2 cup of shredded cheddar cheese
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a non-stick skillet over medium-high heat.

  2. Add onions, bell peppers, and mushrooms to the skillet and cook until tender.

  3. In a bowl, whisk together eggs, almond milk, salt, and pepper.

  4. Pour the egg mixture over veggies in the skillet and cook until the bottom is set.

  5. Sprinkle cheese on top of the eggs and place in the oven under the broiler for 2-3 minutes until the cheese is melted and bubbly.

  6. Using a spatula, gently fold the omelette in half and serve hot.
