  • 1 cup almond flour
  • 1/4 cup powdered erythritol
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.

  2. In a bowl, mix together almond flour, erythritol, baking powder, and salt.

  3. In a separate bowl, whisk together eggs, almond milk, coconut oil, and vanilla extract.

  4. Combine the dry ingredients with the wet ingredients and mix well.

  5. Pour the batter into the cake pan and bake for 25-30 minutes, or until the cake is golden brown and a toothpick comes out clean.

  6. Let the cake cool before serving.
