Ingredients

  • 1.5 lbs beef stew meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped mushrooms
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Season the beef stew meat with salt and pepper, and brown in a skillet over medium-high heat.

  2. Add the onion and garlic to the skillet and cook until softened.

  3. Transfer the beef and onion mixture to a slow cooker.

  4. Add in the beef broth, celery, carrots, mushrooms, tomato paste, thyme, and rosemary.

  5. Stir to combine, cover, and cook on low for 6-8 hours, or until the beef is tender and the vegetables are cooked through.

  6. Adjust seasoning with salt and pepper, if necessary, and serve hot.
