How To Make Spinach and White Bean Soup
A hearty and healthy soup packed with protein and greens.
Serves:
Ingredients
- 2 cans of white beans, drained and rinsed
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups of fresh spinach
- 4 cups of vegetable broth
- 1 tsp of dried thyme
- Salt and pepper to taste
- 1 tbsp of olive oil
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and cook until translucent, about 5 minutes.

Add garlic and thyme and cook for another 1-2 minutes.

Add drained white beans and stir to combine.

Pour in vegetable broth and bring to a simmer.

Stir in fresh spinach and cook until wilted, about 3-4 minutes.

Use an immersion blender to blend soup until smooth (alternatively, transfer to a blender and blend until smooth).

Season with salt and pepper to taste.

Serve hot, garnished with fresh herbs or croutons if desired.
