Spinach and White Bean Soup Recipe

How To Make Spinach and White Bean Soup

A hearty and healthy soup packed with protein and greens.

Serves:

Ingredients

  • 2 cans of white beans, drained and rinsed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups of fresh spinach
  • 4 cups of vegetable broth
  • 1 tsp of dried thyme
  • Salt and pepper to taste
  • 1 tbsp of olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and cook until translucent, about 5 minutes.

  3. Add garlic and thyme and cook for another 1-2 minutes.

  4. Add drained white beans and stir to combine.

  5. Pour in vegetable broth and bring to a simmer.

  6. Stir in fresh spinach and cook until wilted, about 3-4 minutes.

  7. Use an immersion blender to blend soup until smooth (alternatively, transfer to a blender and blend until smooth).

  8. Season with salt and pepper to taste.

  9. Serve hot, garnished with fresh herbs or croutons if desired.
