Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can white beans, drained and rinsed
  • 2 cups chopped fresh spinach
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a soup pot over medium heat.

  2. Add diced onion and sauté until translucent.

  3. Add minced garlic and sauté for another minute.

  4. Pour in vegetable broth and bring to a simmer.

  5. Add white beans, spinach, and oregano, and stir to combine.

  6. Simmer for 10-15 minutes until the spinach is wilted and the beans are heated through.

  7. Season with salt and pepper to taste.

  8. Serve hot and enjoy!
