How To Make Spinach and White Bean Soup
A hearty and healthy soup packed with protein, fiber, and greens.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can white beans, drained and rinsed
- 2 cups chopped fresh spinach
- 1 tsp dried oregano
- salt and pepper to taste
Instructions

Heat olive oil in a soup pot over medium heat.

Add diced onion and sauté until translucent.

Add minced garlic and sauté for another minute.

Pour in vegetable broth and bring to a simmer.

Add white beans, spinach, and oregano, and stir to combine.

Simmer for 10-15 minutes until the spinach is wilted and the beans are heated through.
