  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 can butter beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and sliced celery. Cook until the vegetables are tender, about 5 minutes.

  2. Add the diced chicken to the pot and cook until it is no longer pink, about 5 minutes.

  3. Pour in the chicken broth and bring the soup to a simmer.

  4. Add the butter beans, dried thyme, and dried rosemary to the pot. Stir well to combine.

  5. Season the soup with salt and pepper to taste.

  6. Simmer the soup for 20 minutes, or until the chicken is cooked through and the flavors have melded together.
