  • 4 whole fish (such as sea bass or red snapper), cleaned and scaled
  • 2 lemons, sliced
  • 4 cloves of garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the minced garlic, chopped parsley, chopped dill, olive oil, salt, and pepper to make the marinade.

  3. Place the cleaned and scaled fish on a baking tray lined with parchment paper.

  4. Rub the marinade all over the fish, ensuring it’s evenly coated.

  5. Stuff each fish cavity with a few slices of lemon for extra flavor.

  6. Arrange the remaining lemon slices on top of the fish.

  7. Roast in the preheated oven for 25 minutes or until the fish is cooked through and flakes easily with a fork.

  8. Serve the Greek-style roast fish with your choice of sides.
