  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 lemon, sliced
  • 4 mini baguettes
  • 1/2 cup Greek yogurt
  • 1 tbsp dill, chopped
  • 1 cup cherry tomatoes
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup capers
  • 1/4 cup olives

Instructions

  1. Preheat grill to medium-high heat.

  2. Rub salmon fillets with olive oil, salt, and black pepper.

  3. Place salmon on the grill and cook for 4-5 minutes per side, or until cooked through.

  4. While salmon is grilling, slice the mini baguettes in half and lightly toast them.

  5. In a small bowl, mix Greek yogurt and chopped dill. Set aside.

  6. Arrange the grilled salmon, lemon slices, mini baguettes, Greek yogurt dip, cherry tomatoes, cucumber slices, red onion, capers, and olives on a large platter.

  7. Serve the salmon picnic platter with additional lemon wedges on the side.
