Ingredients

  • 1 pound asparagus, woody ends trimmed
  • 8 ounces lump crab meat
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes until crisp-tender. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and pat dry.

  2. In a large bowl, combine the asparagus, crab meat, red onion, cherry tomatoes, cucumber, and fresh dill.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve the salad chilled or at room temperature.
