How To Make Roast Salmon with Pesto Sauce & Beetroot Slaw

Ingredients
- 4 salmon fillets
- 1/4 cup of pesto sauce
- 2 cups of shredded beetroot
- 1/4 cup of Greek yogurt
- 1 tbsp of lemon juice
- 1 tbsp of honey
- Salt and pepper to taste
- Olive oil for cooking
Instructions

Preheat the oven to 400°F (200°C).

Place the salmon fillets on a baking sheet lined with parchment paper.

Spread pesto sauce evenly over the top of each salmon fillet.

Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, prepare the beetroot slaw by combining shredded beetroot, Greek yogurt, lemon juice, honey, salt, and pepper in a bowl. Mix well.

Serve the roasted salmon fillets with a generous portion of beetroot slaw on the side.
