Ingredients

  • 4 salmon fillets
  • 1/4 cup of pesto sauce
  • 2 cups of shredded beetroot
  • 1/4 cup of Greek yogurt
  • 1 tbsp of lemon juice
  • 1 tbsp of honey
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper.

  3. Spread pesto sauce evenly over the top of each salmon fillet.

  4. Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  5. Meanwhile, prepare the beetroot slaw by combining shredded beetroot, Greek yogurt, lemon juice, honey, salt, and pepper in a bowl. Mix well.

  6. Serve the roasted salmon fillets with a generous portion of beetroot slaw on the side.
