How To Make Mexican Pulled Chicken & Beans

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped cilantro
  • 4 whole wheat tortillas
  • Optional toppings: shredded cheese, sour cream, avocado

Instructions

  1. In a large pot, add chicken breasts and enough water to cover. Bring to a boil and simmer for 15-20 minutes until chicken is cooked through.

  2. Remove chicken from the pot and shred using two forks.

  3. In the same pot, add black beans, salsa, chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir well.

  4. Return shredded chicken to the pot and mix with the bean mixture. Cook on low heat for 15-20 minutes, stirring occasionally.

  5. Stir in chopped cilantro.

  6. Warm the tortillas in a dry skillet or microwave.

  7. Serve the pulled chicken and beans mixture on top of the warm tortillas.

  8. Top with optional toppings such as shredded cheese, sour cream, and avocado.

  9. Enjoy!
