How To Make Sweetcorn & Spinach Fritters

Ingredients

  • 1 cup sweetcorn kernels
  • 1 cup spinach, finely chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup grated cheddar cheese
  • 1/4 cup milk
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil for frying

Instructions

  1. In a large bowl, combine the sweetcorn, spinach, flour, cheddar cheese, milk, egg, baking powder, salt, and black pepper. Mix well until all ingredients are combined.

  2. Heat the vegetable oil in a frying pan over medium heat.

  3. Spoon 1/4 cup portions of the fritter mixture into the pan, flattening them slightly with the back of the spoon. Cook for 3-4 minutes on each side until golden brown.

  4. Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.

  5. Repeat with the remaining fritter mixture, adding more oil to the pan as needed.

  6. Serve the sweetcorn & spinach fritters warm as a main dish or a snack.
