Ingredients
- 4 cod fillets
- Salt and pepper, to taste
- 1 tbsp olive oil
- 2 cups cherry tomatoes
- 1 bunch watercress
- 1/2 cup Greek yogurt
- 2 tbsp lemon juice
- 2 cloves garlic, minced
Instructions

Preheat the oven to 400°F (200°C).

Season the cod fillets with salt and pepper on both sides.

Heat the olive oil in a large oven-safe skillet over medium heat.

Add the cod fillets to the skillet and cook for 3-4 minutes on each side, until golden brown.

Transfer the skillet to the oven and roast for an additional 10-12 minutes, until the cod is cooked through.

Meanwhile, spread the cherry tomatoes on a baking sheet lined with parchment paper.

Drizzle them with olive oil and sprinkle with salt and pepper.

Roast the cherry tomatoes in the oven for about 15 minutes, until they start to burst.

In a blender or food processor, combine the watercress, Greek yogurt, lemon juice, and minced garlic.
