Ingredients

  • 1 head of chicory
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of sliced red onions
  • 1/4 cup of sliced almonds
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 1 tablespoon of honey
  • Salt and pepper, to taste

Instructions

  1. Wash and dry the chicory leaves. Tear them into bite-sized pieces and place them in a large bowl.

  2. Add the cherry tomatoes, feta cheese, red onions, and sliced almonds to the bowl.

  3. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.

  4. Drizzle the dressing over the salad and toss to combine.

  5. Serve immediately and enjoy!
