How To Make Chipotle Cod Tacos

Ingredients
- 1 lb cod fillets
- 2 chipotle peppers in adobo sauce
- 2 cloves garlic, minced
- 1 tbsp lime juice
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 8 small tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges, for serving
Instructions

In a blender or food processor, combine chipotle peppers, garlic, lime juice, cumin, smoked paprika, salt, and black pepper. Blend until smooth.

Place cod fillets in a shallow dish and pour the chipotle marinade over them. Let marinate for at least 10 minutes.

Heat olive oil in a large skillet over medium heat. Add marinated cod fillets and cook for 3-4 minutes per side, or until fish is cooked through and flakes easily with a fork.

Remove cod from skillet and transfer to a cutting board. Using a fork, gently flake the fish into smaller pieces.

Heat tortillas in a dry skillet or directly over a gas burner until warm and pliable.

To assemble the tacos, place a spoonful of the flaked cod onto each tortilla. Top with shredded lettuce, diced tomatoes, and chopped cilantro. Squeeze fresh lime juice over the top.

Serve the Chipotle Cod Tacos with lime wedges on the side.
