How To Make Baked Ratatouille & Goat’s Cheese

Ingredients

  • 1 eggplant, sliced
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 200g goat’s cheese, crumbled
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, combine the eggplant, zucchinis, bell peppers, onion, and garlic.

  3. Drizzle with olive oil and sprinkle with dried thyme, dried rosemary, salt, and pepper. Toss to coat evenly.

  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.

  5. Remove from the oven and sprinkle the crumbled goat’s cheese over the top.

  6. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.

  7. Garnish with fresh basil leaves before serving.
