How To Make Courgette, Pea & Pesto Soup

Ingredients
- 2 courgettes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups of frozen peas
- 4 cups of vegetable or chicken broth
- 2 tablespoons of pesto
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

In a large pot, heat some olive oil over medium heat. Add the onions and garlic, and sauté until translucent.

Add the diced courgettes and frozen peas to the pot. Cook for about 5 minutes, until they start to soften.

Pour in the vegetable or chicken broth, and bring to a simmer. Allow the soup to cook for another 15 minutes, or until the courgettes and peas are tender.

Remove the pot from the heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the soup to the pot and stir in the pesto. Season with salt and pepper to taste.

Reheat the soup over low heat if needed. Serve hot, garnished with fresh basil leaves.
