How To Make Chipotle Chicken Tacos with Pineapple Salsa

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 8 small flour tortillas
  • 1 cup diced pineapple
  • 1/2 cup diced red onion
  • 1 jalapeno, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt to taste


  1. In a small bowl, combine chipotle powder, garlic powder, cumin, paprika, salt, and black pepper. Rub the spice mixture all over the chicken breasts.

  2. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 4-5 minutes per side or until cooked through. Remove from heat and let it rest for a few minutes before slicing.

  3. While the chicken is resting, prepare the pineapple salsa. In a bowl, combine diced pineapple, red onion, jalapeno, cilantro, lime juice, and salt. Mix well.

  4. Heat the flour tortillas in a separate skillet until warm.

  5. Slice the cooked chicken breasts into thin strips.

  6. To serve, place a few chicken slices onto each warm tortilla and top with the pineapple salsa.

  7. Serve the Chipotle Chicken Tacos with Pineapple Salsa immediately and enjoy!
