How To Make Easy Chicken & Chickpea Tagine

Ingredients

  • 1.5 lbs of chicken thighs
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1 can (14 oz) of chickpeas, drained and rinsed
  • 1 can (14 oz) of diced tomatoes
  • 1 cup chicken broth
  • 1 lemon, sliced
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Season the chicken thighs with salt and pepper. Heat some oil in a large pot or deep skillet over medium-high heat and brown the chicken on all sides. Remove the chicken from the pot and set aside.

  2. In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant.

  3. Add the ground cumin, coriander, ginger, smoked paprika, and cinnamon to the pot. Stir well to coat the onions and garlic with the spices.

  4. Return the chicken thighs to the pot, along with any accumulated juices. Add the drained chickpeas, diced tomatoes, and chicken broth. Stir to combine.

  5. Place the lemon slices on top of the mixture. Cover the pot and let it simmer over low heat for about 45 minutes, or until the chicken is cooked through and tender.

  6. Remove the lid and let the sauce thicken for about 15 minutes.

  7. Serve the chicken and chickpea tagine over cooked couscous or rice. Garnish with fresh cilantro.
