How To Make Easy Beef Stew with Sweet Potato Topping

Ingredients
- 1.5 lbs beef stew meat, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
- 1/4 tsp nutmeg
Instructions

In a large pot, brown the beef stew meat over medium heat.

Add onion and garlic, cook until softened.

Add carrots and celery, cook for another 5 minutes.

Stir in beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 1.5 hours or until beef is tender.

In the meantime, cook the sweet potatoes in boiling water until tender. Drain and mash with butter, milk, nutmeg, salt, and pepper.

Preheat oven to 375°F (190°C).

Transfer the beef stew to a baking dish and spread the mashed sweet potatoes over the top.

Bake for 20-25 minutes or until the sweet potatoes are lightly golden.
