How To Make Baja Avocado Tacos with Chipotle Crema & Pickled Slaw

Ingredients
- 4 small tortillas
- 2 ripe avocados, sliced
- 2 cups shredded cabbage
- 1 small red onion, thinly sliced
- 1 jalapeno, seeds removed and thinly sliced
- 1/4 cup apple cider vinegar
- 2 tbsp sugar
- 1/2 cup mayonnaise
- 1 tbsp chipotle peppers in adobo sauce
- 1 tbsp lime juice
- Salt and pepper, to taste
Instructions

In a small bowl, combine the cabbage, red onion, jalapeno, apple cider vinegar, sugar, and a pinch of salt. Let it sit for at least 20 minutes to pickle.

In another bowl, mix together the mayonnaise, chipotle peppers in adobo sauce, lime juice, and salt and pepper to taste. This is your chipotle crema.

Heat the tortillas on a dry skillet over medium heat until warm and pliable.

To assemble the tacos, spread a spoonful of chipotle crema on each tortilla. Top with avocado slices and a generous scoop of the pickled slaw. Fold in half and enjoy!
