How To Make Coriander Chicken with Rice & Spiced Vegetables

Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tablespoons coriander powder
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 teaspoon cumin powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 2 medium carrots, sliced
- 1 zucchini, sliced
- Cooked rice for serving
Instructions

In a bowl, mix coriander powder, garlic powder, paprika, cumin powder, salt, and pepper. Rub this mixture all over the chicken breasts.

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

In the same skillet, add onion and cook until slightly softened, about 3 minutes. Add bell peppers, carrots, and zucchini, and cook for another 5 minutes or until the vegetables are crisp-tender.

Return the chicken breasts to the skillet and cook for an additional 10 minutes or until cooked through and the vegetables are tender.

Serve the coriander chicken over cooked rice, accompanied by the spiced vegetables.
