Serves:
Ingredients
- 2 cups of all-purpose flour
- 1/2 teaspoon of salt
- 2/3 cup of unsalted butter, cold and cubed
- 1/4 cup of cold water
- 4 large Granny Smith apples, peeled, cored, and sliced
- 1/2 cup of granulated sugar
- 1/4 cup of brown sugar
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 2 tablespoons of lemon juice
- 1 tablespoon of cornstarch
- 1 tablespoon of butter, cut into small pieces
Instructions
-
In a large bowl, mix the flour and salt together. Add the cold cubed butter and using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
-
Gradually add in the cold water, one tablespoon at a time, and mix until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
-
Preheat the oven to 375°F (190°C).
-
In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well until the apples are coated.
-
Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and press it gently against the bottom and sides of the dish.
-
Spoon the apple mixture into the pie crust and dot with small pieces of butter.
-
Roll out the second disc of dough and place it over the filling. Trim any excess dough and seal the edges by crimping them with a fork or your fingers.
-
Cut a few slits on the top crust to allow steam to escape during baking.
-
Place the pie on a baking sheet to catch any drips and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
-
Allow the pie to cool for at least 2 hours before serving to allow the filling to set.
