  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 cups cream cheese
  • 1 cup huckleberries
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined.

  3. Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust.

  4. In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth.

  5. Add the eggs one at a time, beating well after each addition.

  6. Gently fold in the huckleberries.

  7. Pour the cream cheese mixture onto the crust in the springform pan.

  8. Bake for 50-60 minutes, or until the center is set.

  9. Allow the cheesecake to cool completely before removing it from the pan.

  10. Refrigerate for at least 4 hours before serving.

  11. Serve chilled and enjoy!
