Ingredients
- 4 eggs
- 100g caster sugar
- 75g self-raising flour
- 1 tbsp ground ginger
- 200g marmalade
- Icing sugar, for dusting
Instructions

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

In a large bowl, whisk the eggs and caster sugar until pale and fluffy.

Sift in the flour and ground ginger, then gently fold into the egg mixture until well combined.

Pour the batter onto the prepared baking tray and spread evenly using a spatula.

Bake in the preheated oven for 10-12 minutes, or until the cake is golden and springs back when lightly touched.

While the cake is still warm, carefully roll it up using the parchment paper.

Allow the cake to cool completely in the rolled-up position.

Carefully unroll the cake and spread the marmalade evenly over the surface.

Roll the cake back up, removing the parchment paper as you go.

Dust with icing sugar before serving.
