How To Make Mango & Passion Fruit Pavlova Roulade

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp cornstarch
  • 1 tsp white vinegar
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 cup diced mango
  • 1/2 cup passion fruit pulp
  • Extra powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a clean, dry mixing bowl, beat the egg whites until stiff peaks form.

  3. Gradually add in the granulated sugar, cornstarch, and vinegar while continuing to beat until glossy peaks form.

  4. Spread the meringue mixture onto the prepared baking sheet, forming a rectangle shape.

  5. Bake for 25 minutes or until the meringue is crisp and lightly golden.

  6. Remove from the oven and let cool for a few minutes.

  7. In the meantime, whip the heavy cream and powdered sugar until soft peaks form.

  8. Carefully transfer the cooled meringue onto a clean kitchen towel.

  9. Spread the whipped cream evenly over the meringue, leaving a small border around the edges.

  10. Sprinkle the diced mango and passion fruit pulp over the whipped cream.

  11. Starting from one end, carefully roll up the meringue like a Swiss roll using the kitchen towel for support.

  12. Transfer the rolled pavlova onto a serving platter, seam side down.

  13. Dust with powdered sugar and garnish with extra mango slices and passion fruit pulp, if desired.

  14. Slice and serve.
