- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup chopped prunes
- 1/4 cup sliced almonds
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
-
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
-
Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs.
-
Stir in the chopped prunes and sliced almonds.
-
In a separate bowl, combine the milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
-
Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Pat the dough into a 1-inch thickness.
-
Use a round biscuit cutter to cut out scones from the dough and place them onto the prepared baking sheet.
-
Bake for 12-15 minutes, or until the scones are golden brown on top.
-
Serve the prune and almond scones warm with butter or your favorite jam.
