Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped prunes
  • 1/4 cup sliced almonds
  • 1/2 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs.

  4. Stir in the chopped prunes and sliced almonds.

  5. In a separate bowl, combine the milk and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

  6. Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Pat the dough into a 1-inch thickness.

  7. Use a round biscuit cutter to cut out scones from the dough and place them onto the prepared baking sheet.

  8. Bake for 12-15 minutes, or until the scones are golden brown on top.

  9. Serve the prune and almond scones warm with butter or your favorite jam.
