How To Make Fleming’s Chocolate Lava Cake

  • ½ lb unsalted butter (chilled & roughly chopped)
  • ½ lb semi-sweet chocolate (roughly chopped)
  • 4 eggs (whole)
  • 4 egg yolks
  • ½ cup brown sugar
  • 1 tbsp cake flour
  • 2 tsp salt
  1. Place the butter & chocolate in a double boiler or metal mixing bowl over simmering water. Heat the butter and chocolate until they melt.
  2. While the chocolate is melting, combine the whole eggs and egg yolks in a mixing bowl and whip them for 5-6 minutes until they slightly thicken.
  3. Add the sugar & salt to the egg mixture and whip for 1 minute to blend them well.
  4. Once the chocolate and butter have melted, lightly whip them together until a smooth mixture is formed, then add them to the egg mixture.
  5. Fold in the flour and combine it well with the chocolate mixture, then pour the mixture into a well-greased and floured ramekin up to about half an inch from the top.
  6. Place the mixture in an oven heated to 400 degrees Fahrenheit and bake it for 12-14 minutes.
  7. Once it’s done baking, remove the cake from the oven and let it cool for 1 minute.
  8. Transfer the cake onto a serving plate side down and serve it with ice cream. Feel free to garnish it with fresh fruit, chopped nuts, or whipped cream. Enjoy!
