Ingredients

  • 2 ripe bananas
  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g dulce de leche
  • 200ml double cream
  • 1 tsp vanilla extract
  • 100g mini marshmallows

Instructions

  1. Mash the bananas in a bowl until smooth.

  2. Crush the digestive biscuits into fine crumbs and mix in the melted butter. Press this mixture into the base of a greased cake tin to form the crust.

  3. Spread the dulce de leche evenly over the biscuit crust.

  4. Whip the double cream until soft peaks form, then fold in the mashed bananas and vanilla extract.

  5. Spread the banana cream mixture over the dulce de leche layer.

  6. Sprinkle the mini marshmallows on top of the banana cream.

  7. Bake in a preheated oven at 180°C (350°F) for 20-30 minutes, or until the marshmallows are golden and toasted.

  8. Allow the cake to cool completely before slicing and serving.
