Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup toffee sauce

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

  2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.

  3. Beat in the eggs, one at a time, followed by the mashed bananas and vanilla extract.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, mixing until just combined.

  5. Pour half of the batter into the prepared loaf pan. Drizzle half of the toffee sauce over the batter. Repeat with the remaining batter and toffee sauce.

  6. Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  8. Serve slices of the sticky banoffee loaf drizzled with extra toffee sauce.
