How To Make Bombay Potato & Spinach Pies

Ingredients
- 4 sheets of puff pastry
- 2 medium potatoes, peeled and diced
- 1 cup spinach, chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- Oil for frying
Instructions

Preheat the oven to 180°C (350°F).

In a pan, heat oil and add cumin seeds. Once they start to crackle, add onion and garlic. Cook until onion becomes translucent.

Add potatoes, turmeric powder, garam masala, and salt. Cook until potatoes are tender.

Add spinach and cook until wilted.

Roll out the puff pastry sheets and cut out circles to fit your pie molds.

Spoon the potato and spinach mixture into the pie molds and cover with the pastry circles.

Brush the pastry with beaten egg and bake in the preheated oven for 20-25 minutes or until golden brown.
