  • 4 lamb chops
  • 1 kg new potatoes, halved
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • Olive oil, for griddling

Instructions

  1. In a small bowl, combine the ground cumin, ground coriander, paprika, chili powder, salt, and pepper.

  2. Preheat a griddle pan or barbecue to medium-high heat.

  3. Rub the lamb chops with the spice mixture, ensuring they are well coated.

  4. In a large pot of salted boiling water, cook the new potatoes until just tender. Drain and set aside.

  5. Drizzle olive oil over the griddle pan or barbecue and place the lamb chops on the hot surface. Cook for 3-4 minutes on each side for medium-rare, or adjust cooking time to your preference.

  6. While the lamb is cooking, heat a separate pan over medium heat and add a drizzle of olive oil. Add the cooked new potatoes to the pan and sprinkle with the remaining spice mixture. Cook for 5-7 minutes, stirring occasionally, until the potatoes are crispy and golden.

  7. Serve the griddled lamb chops with the spiced new potatoes, and enjoy!
