Ingredients

  • 4 medium sweet potatoes, peeled and cut into cubes
  • 1 red pepper, sliced
  • 200g halloumi cheese, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a large bowl, toss the sweet potato cubes and red pepper slices with olive oil, smoked paprika, salt, and pepper.

  3. Spread the sweet potato and red pepper mixture onto a baking sheet in a single layer.

  4. Roast in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy.

  5. In the meantime, heat a non-stick skillet over medium heat.

  6. Place the halloumi slices in the skillet and cook for 2-3 minutes on each side, or until golden brown.

  7. Once the sweet potatoes are done, remove them from the oven and transfer to a serving dish.

  8. Top the roasted sweet potatoes with the cooked halloumi slices and garnish with fresh parsley.

  9. Serve hot and enjoy!
