How To Make Sweet Potatoes with Red Pepper & Halloumi

Ingredients
- 4 medium sweet potatoes, peeled and cut into cubes
- 1 red pepper, sliced
- 200g halloumi cheese, sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Preheat the oven to 200°C (400°F).

In a large bowl, toss the sweet potato cubes and red pepper slices with olive oil, smoked paprika, salt, and pepper.

Spread the sweet potato and red pepper mixture onto a baking sheet in a single layer.

Roast in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy.

In the meantime, heat a non-stick skillet over medium heat.

Place the halloumi slices in the skillet and cook for 2-3 minutes on each side, or until golden brown.

Once the sweet potatoes are done, remove them from the oven and transfer to a serving dish.

Top the roasted sweet potatoes with the cooked halloumi slices and garnish with fresh parsley.
