Ingredients
- 2 cups of polenta
- 4 cups of vegetable broth
- 1 cup of grated parmesan cheese
- 1 lb of mushrooms, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large saucepan, bring the vegetable broth to a boil. Slowly pour in the polenta while whisking continuously to avoid lumps.

Reduce the heat to low and cook the polenta for 10-15 minutes, stirring occasionally, until it thickens.

Stir in the grated parmesan cheese until melted. Season with salt and pepper to taste.

In a separate large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.

Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown.

Spread the cooked polenta evenly onto a greased tart pan or baking dish.

Top the polenta with the sautéed mushrooms and onions, spreading them evenly.

Bake in the preheated oven for 25-30 minutes, until the tart is golden brown and set.

Remove from the oven and let it cool for a few minutes before garnishing with fresh herbs.
