How To Make Indian Quinoa Salad Recipe
A refreshing and nutritious salad with a blend of Indian spices and quinoa.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 tsp salt
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomato
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup roasted peanuts
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp chaat masala
- 1/2 tbsp olive oil
- 1 tbsp lemon juice
Instructions

Rinse quinoa and add to a pot with water and salt. Bring to a boil, then reduce heat and simmer until water is absorbed (about 15 minutes).

While the quinoa is cooking, dry roast cumin and coriander seeds in a pan.

Once quinoa is cooked, fluff with a fork and set aside to cool.

In a bowl, mix together chopped cucumber, tomato, red onion, cilantro, mint leaves, and roasted peanuts.

In a separate small bowl, whisk together chaat masala, olive oil, and lemon juice to make the dressing.

Add the cooled quinoa to the bowl with the vegetables and mix in the dressing.

Serve chilled.
