  1. In a pan, boil sweet corn kernels until cooked. Drain and let them cool.

  3. In another bowl, whisk together lemon juice, olive oil, roasted cumin powder, red chili powder, and salt.

  4. Pour the dressing over the corn mixture and toss gently.

  5. Serve chilled and garnish with additional mint leaves.
