Ingredients
- 1 cup red lentils
- 2 cups water
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp salt
- 2 cups fresh spinach, chopped
- Juice of 1 lemon
- Fresh cilantro, for garnish
Instructions

Rinse the lentils under cold water until the water runs clear.

In a large pot, bring 2 cups of water to a boil. Add the lentils and cook for 15-20 minutes until tender.

In a separate pan, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger. Cook until onions are golden brown.

Add the cumin seeds, turmeric powder, coriander powder, garam masala, and salt. Stir well to combine.

Add the cooked lentils and spinach to the pan. Cook for another 5 minutes, stirring occasionally.

Remove from heat and stir in the lemon juice.

Serve hot, garnished with fresh cilantro.
