How To Make Pork Saltimbocca

Ingredients

  • 4 pork cutlets
  • 8 slices of prosciutto
  • 8 fresh sage leaves
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 2 tbsp unsalted butter

Instructions

  1. Place the pork cutlets between two pieces of plastic wrap and pound them to 1/4 inch thickness using a meat mallet.

  2. Season the pork cutlets with salt and pepper.

  3. Place a sage leaf on top of each cutlet, then wrap each cutlet with a slice of prosciutto, securing it with a toothpick if needed.

  4. In a shallow dish, mix together the flour, salt, and pepper. Dredge each pork cutlet in the flour mixture, shaking off any excess.

  5. Heat the olive oil in a large skillet over medium-high heat. Add the pork cutlets and cook for about 3-4 minutes per side, until golden brown and cooked through. Remove the pork cutlets from the skillet and set aside.

  6. Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until the wine is reduced by half.

  7. Add the chicken broth to the skillet and simmer for another 2-3 minutes.

  8. Remove the skillet from heat and stir in the butter until melted and the sauce is smooth.

  9. Place the cooked pork cutlets back into the skillet, spooning the sauce over them.

  10. Serve the Pork Saltimbocca with the sauce drizzled on top.
