Serves:

Ingredients

  • 1 cup of wild rice, cooked
  • 1 parsnip, peeled and diced
  • 2 cups of spinach leaves
  • 1 can of artichoke hearts, drained and chopped
  • 1/4 cup of chopped red onion
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped walnuts
  • 1/4 cup of crumbled feta cheese
  • dressing:
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked wild rice, diced parsnip, spinach leaves, chopped artichoke hearts, chopped red onion, chopped parsley, chopped walnuts, and crumbled feta cheese.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.

  3. Pour the dressing over the salad and toss gently to combine.

  4. Serve immediately or refrigerate for later use.
