Ingredients

  • 1 cup dried chickpeas
  • 1 bunch spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 tsp garam masala
  • 1 tbsp oil
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Soak the dried chickpeas in water overnight. Drain and rinse before using.

  2. Heat oil in a large pot or pressure cooker and add cumin seeds. Fry for a few seconds until they sizzle.

  3. Add chopped onions, garlic, and ginger. Sauté until onions are golden brown.

  4. Add coriander powder, turmeric powder, and chili powder. Mix well.

  5. Add soaked chickpeas and spinach. Stir to combine.

  6. Add enough water to cover the chickpeas and bring to a boil. If using a pressure cooker, seal and cook for 20 minutes.

  7. If using a regular pot, cover and simmer for 1 hour or until chickpeas are tender.

  8. Stir in garam masala and salt to taste.

  9. Serve hot, garnished with fresh cilantro. Goes well with rice or naan bread.
