Ingredients
- 2 cups spinach, chopped
- 1 sweet potato, boiled and mashed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 12 samosa pastry sheets
- Oil for frying
Instructions

Heat oil in a pan and sauté onions, garlic, and ginger until golden brown.

Stir in mashed sweet potato, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.

Remove from heat and let the mixture cool.

Take a samosa pastry sheet and cut it in half. Fold one half into a cone shape and fill it with the spinach and sweet potato mixture.

Apply water to the edges and seal the samosa.

Repeat the process with the remaining pastry sheets.

Heat oil in a deep pan and fry samosas until golden brown and crispy.

Serve hot with chutney or ketchup.
