Ingredients

  • 500 grams okra, washed and dried
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt, to taste
  • Fresh coriander leaves, for garnish

Instructions

  1. Trim the ends of the okra and slice them into small pieces.

  2. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.

  3. Add sliced onions and minced garlic to the pan. Sauté until the onions turn golden brown.

  4. Add the sliced okra to the pan and mix well. Cook for 5 minutes, stirring occasionally.

  5. Sprinkle coriander powder, turmeric powder, red chili powder, and salt over the okra. Mix well to coat the spices evenly.

  6. Cover the pan and cook for another 10-15 minutes, or until the okra is cooked through and tender.

  7. Garnish with fresh coriander leaves.

  8. Serve hot with rice or roti.
